This unique bespoke 3 tier wedding cake is inspired by the day the groom proposed to his bride on a gondala in the romantic city of Venice.
I was supplied with photographs of the bride and groom, flowers for the brides bouquet, colours and an idea of a gondala complete with the bride and groom to sit on top.
At first I sketched out a preliminary design that was 2 tiers for the bride and groom to approve. Eventually they changed it to 3 tiers as the wedding got bigger.
All the decoration was made in advance ready to be applied to the cakes which would be covered a few days before the actual wedding.
This gorgeous cake topper was made separately from the cake. I like to make it this way so it is detachable from the cake and can be kept as a keepsake of their special day.
When designing this topper, I focused on looking what a gondala really looks like in photographs, and in doing this I found out that if I created one true to an original it would be very large with very small people on it which wouldn’t work.
So this gondala is a stylised version to create impact and therefore characters that are a good size for the cake.
‘Blue Moon’ roses, white roses, Lavender, Gypsophila and ‘Dusty Miller’ silver leaves (all in the brides bouquet) were hand made. The Lavender and Gypsophila were created using florists wire and was removed before the cake was cut.
The bottom tier comprised of an elaborate quilt effect on which the delicate flowers sat.
It was safer to take the cake and topper in separate boxes so it was assembled at Woodborough Hall, Nottingham ready for the evening reception.

This cake is full of energy and fun. At the top, the burst of tiny flowers leads to a cascade of various sized flowers flowing down the side to the base.
I chose to do this all in white this time however, the design would work just as well using coloured flowers or maybe even a coloured background too.
Being a 3 tiered cake it would be suitable for a birthday, anniversary or a wedding perhaps? The burst of flowers on the top could be substituted for bride and groom figures or reduced in size to fit alongside the figures.

This cake has grown from an idea I had for couples who don’t want traditional or formal style wedding cakes or for those on a more modest budget.
The various pink and white heart shapes are loosely and informally scattered over the cake whilst the hearts exploding from the top of the cake give it a real sense of energy.

I wanted to create a clean, sharp, minimalist wedding cake but, I didn’twant it to look too plain. So, I decided to hand make 5 delicate rose flower heads to grace the top with a few small leaves to fill in the gaps.
I still wasn’t quite happy with the overall look so I added a ring of roses between the lower two tiers.
Adding the roses between the upper tiers aswell, made the cake look too fussy aswell as making it substantially more expensive.
The roses themselves are modelled on flower heads of a particular lovely variety of roses cut from my own garden.

Sometimes the simplest ideas are the best. A mantra that I think is well proven with this simple but elegant wedding cake design.
I commissioned the local florist to arrange a rose and ivy topper for this cake. With flowers being the focal point of this cake, I felt there was no need for any elaborate or intricate icing decoration, just a plain gold ribbon wrapped around each tier to tie in with the gold beads in the flower arrangement.

This is the wedding cake that I created for my own wedding last summer. The design on the sides of each tier was taken from the pattern on the wedding stationery. It was painted on with edible food colouring and topped off with real flowers to match my bouquet.
This was the catalyst that inspired me to take up cake decorating as a profession.
