This 10 inch square sponge cake was created last week. It needed to have a clean and simple but intricate stylish design for Bill’s 80th birthday party.

Firstly I consulted with the client about what kind of style, detail and colours they required which then followed with a computer generated design sent by email for approval.

It’s always best to ask about the person whose birthday it is; what do they like to do, follow, hobbies etc., and then it gives you an idea what to make for the cake.

To give you an idea of the scale (how small) this design is the plane was about 70mm long. All created using modelling paste onto a board covered with sugarpaste, this was produced a few days before covering the cake so it gave me plenty of time to get it right. The board was then attached to the cake with royal icing which meant that prior to cutting the cake, the design could be removed and saved for memories.

Hello everyone. Just completed this fantastic 1st rosette birthday cake for Emma who likes horses and likes to win too.

It’s been created in pastel blues, yellows, and greens with pretty flowers around the base (she doesn’t like pink but the cake still looks pretty).

Fortunately I had a rosette in the house to model this from. My husband came first in a classic car show with his Rover P6 and it’s usually hung up on his computer. It is always a great help if you have an actual item in front of you that you are making so you can see all the details and shape from every angle – obviously if you were modelling something like a horse this wouldn’t apply….lol.

After creating the ribbons and rosette in modelling paste the cake was completed by piping 1st Emma and Happy 11th Birthday… and the cake was absolutely loved by the little lady.

This amazing cake was created last week for a lovely couples 25th Wedding Anniversary party. They do a lot of walking with their dog Minty who loves to chase squirrels and this is what the bespoke cake design is based upon. This beautiful cake topper is actually sat on a cake board so it could be removed before the cake was cut and saved as a memento of their special day.

These hand-made figures are sat on a log which was based around a photograph that was supplied to me when the cake order was placed.

This is their cute little West Highland terrier called Minty which is roughly around 1½ inch wide and 1 inch high. He is eyeing up the squirrel which is even smaller than Minty and holding an acorn.

Around the actual cake a meadow was hand-painted with edible food colouring featuring daisies, butterflies, dragonflies and ladybirds surrounded by bright green grass.

When designing and creating cakes it’s best to make sure the cake decorating looks good from all angles – even behind.

The result of all this hard and enjoyable work was a cake I was very proud of and was just what the couple had in mind – and they loved it.

I was commissioned to create this wonderful Golden Anniversary cake for a couple celebrating 50 years of wonderful marriage. Congratulations you both.

This couple are a real inspiration and so they required a beautiful fruit cake decorated in gorgeous gold flowers to signify their 50 years together.

I really enjoyed creating these little flowers using specialist cutters and veiners and then finished these by painting them gold once they had dried.

When searching for the correct ribbon I had my gold lustre dust in my hand and the ribbon in the other as I wanted a good match (there are a few different golds – two different golds would clash and not look beautiful enough).

And then with a steady hand I piped the wording onto a pre-hardened plaque I had made. Once that was dry I used the finest brush I had to painted the piping in the same gold.

Well here I am again with the second sample for ‘Painting on Icing’ I used at my demo.

I like to have a go at what is on trend but it is nice to come up with something original. It’s amazing all the inspiration that is around you to help you design something different to what everyone else is creating.

I found a pattern I liked but changed it to be my own and the colours I loved so I picked similar colours to the original pattern. Another pattern with different colours on could have been used for the inspiration instead. I started off by painting a watercolour version with my changes on watercolour paper to see if I liked it. Drawing around my cutting tools on the paper to see how the final version would look helped too.

The flower shapes in the middle are different flower shapes to the original pattern – I just looked in my tool box and used a flower and scalloped edged cutter I already had and a piping nozzle was used for the small circles.

My special mixture of edible food colours were made to create a thick paint that dries slowly in the palette but quick on the sugarpaste. The edge of the scallops and the flowers were painted in a dark brown with a very fine artists brush and the swirls were all painted free hand. Also I painted some pretty flower shapes in pearl lustre that show up when they catch the light.

I feel that this was a very attractive,  modern and was far different from the original inspired pattern I found and turned into my own design. This unique sample looks amazing and could easily be applied to make a spectacular multiple tiered wedding cake..

This is the reverse of the blue pink flowered handbag cake that I created for a demonstration I was giving. As I explained before it is double sided in order for me to have more techniques to show to everyone.

This cake is a two sided handbag cake which I made for a British Sugar Guild demonstration in a couple of weeks. It will be used to demonstrate lots of different techniques and hopefully inspire people to experiment with their own cake designs.

I painted a pattern in the background to give it some depth. Then flowers made of petal paste were attached over this. The same flower cutter was used to emboss the handbag top and it was finished off using a homemade button mould to create the clasp.

The cake was finished off with tiny piped pale pink dots and silver painted to hightlight the finer detail.

All these words were hand cut to match the birthday invite I designed. The small letters came out sharper than I imagined and the crown came out a treat finished with piped icing.

The final embelishments are the edible printed photos of the lady whose birthday cake it was for.

These detailed letters and crown were hand cut to match an existing invite.

This design could be easily transfered to a wedding cake.

I was really excited about creating a cake for the Wedding Cake competition at Cake International Exhibition at the NEC this month as it was the first time I have entered it. My hard work paid off as I received a Silver Award – a fantastic result.

I decided on a theme of cherubs and hearts for my entry. I loved creating these cute little cherubs with their tiny toes and hands.

They were draped in robes made from icing and tiny flowers were cut in half and attached to their shoulders then brushed with gold.

Two thirds of the cake was highly decorated with the hearts and cherubs but the other third was more simple and gently textured so the overall effect was dynamic in decor and contrast.

The more simple side used a mixture of techniques involving piping, edible lace and painted relief background.

The cake was highlighted with gold columns for the cherubs paradise, delicate roses and topped with 2 cherubs holding edible lace covered hearts.

This cake was for a young ladies 21st Birthday recently.

The number 21 was created out of sugar paste covered with edible lace and accented with small piped dots.

Around the top edge delicate pink pretty flowers were placed and around the sides edible lace and more flowers were added.
